Mufete

Mufete is a typical dish of island of Luanda consisting of grilled fish ( horse mackerel , rooster fish or cacusso ), palm oil beans , manioc , banana bread , sweet potato and musseque flour, accompanied by sauce onion with vinegar , olive oil candy, gindungo and a dash of salt .
The mufete was already consumed in the colonial era as an integral part of the islanders' menu, being an irresistible dish traditionally enjoyed on Saturdays, however it is present in all celebrations such as anniversaries, engagements or weddings. The "elders" of the island like to eat the muffin, at least three times a week, even if there is no type of party or celebration
.
How to make:
For palm beans:
  • 1 kilo of butter beans
  • 1/2 cup of palm oil
  • 1 bay leaf
  • 1 tooth garlic chopped
  • salt to taste
To fish :
  • 6 fish medium (can be any fish you can grill)
  • 6 cloves of crushed garlic
  • 1 bay leaf
  • 1 slice of crushed green pepper
  • 1 lemon
  • salt to taste
  • olive oil
  • Chopped parsley to taste
To the salad onion with pepper and cucumber with tomato:
  • 1 chopped onion
  • 1 chopped green pepper (may be the pepper that has been sliced)
  • 1 lemon
  • salt to taste
  • olive oil
  • 3 large sliced tomatoes
  • 2 large sliced cucumbers
For the stew:
  • 1/2 kilo of potato candy
  • 1/2 kilo of cassava
    • 1/2 kilo of banana bread candy
    And to sprinkle over the beans:
    • roasted musseque flour (roasted manioc flour)
    For palm beans:
    1. Wash the beans and cook.
    2. When almost done, add all the others Ingredients and if a little water is needed and let it cook again until it is completely cooked and creamy.
    3. If it’s not creamy but cooked, you can take a Spoon stick and always stir in the heat until creamy.
    For grilled fish:
    1. Prepare the fish and season with garlic, salt, pepper, bay leaf, lemon and parsley.
    2. When grilling, always brush with oil.
    Salad onion:
    1. In a serving bowl place the chopped onion and chopped green pepper. season with lemon and olive oil.
    2. The secret of this salad is to put even a few drops of lemon with plenty of oil and a shallow teaspoon of water thus forming a sauce .
    For the tomato salad:
    1. Prepare in a separate serving bowl the sliced tomatoes and cucumbers and do not need to season. For the stew:
      1. Just wash the sweet potato well and bring it to a boil in water until cooked and then peel and cut into thick slices.
      2. With cassava, you have to peel it before cooking.
      3. After cooking, cut the potato slices into identical slices.
      4. With the banana, cut the beaks and halves and also go to the fire to cook. it is also cut into slices.
